How do U guys eat Bamboo Shoots?

Do you Love to eat Bamboo Shoots?
I really love to eat them. We are Manipuri we make cuisines from them like traditional Ooty made from pulses with baking soda and bamboo shoots cut in slices. We even make palau and chinese manchurian with Bamboo shoots.

I have heard that Bamboo shoots are eaten and I have seen them being sold in Malls at vegetable section but not tried them so far! I think since Manipur has dense population of Bamboo Grass this is commonly eaten there!Would like to try them once! Thanks for the information!

I did tasted bamboo shoots,but not as a favorite food.
I like it to be cooked like salad and keep in a jar for a week...it tasted nice.
I also tasted one cooked with fresh coconut milk and also tasted nice...but,really not my kind of food.
