To become a trusted middle man, users will have completed many middleman services and done many deals themselves. They will also usually be verified. Showing they have no intentions to scam.

By securing it does that mean change the password/email confirm it and stuff so it cant be pulled and also what if a scam happens before a middle man can secure but while it is in they're possesion such as while confirming the account the middle man is unable to get the account from the buyer and the middle man gets blocked? Is that where the TOS that most middle men make come into into effect or?

Well, nothing is actually "secure" and that's not the MM's fault if it ever does in fact somehow get pulled back. The MM's job is to simply change the email/password etc on the account. They are not required to do anything else other than that. Hope that clears it up.
