You probably won't find many original AIM usernames that are available. I could highly recommend checking out Christy's shop with over 200+ original names, here and here.

I heard it's very easy for some people to jack AIM accounts, but the new version of Aim is a little bit more secure.

No. You just have to have tools. Not many people can jack aims easily. But the few people that have the tools can jack almost any aim.
