If you look at the top of the message it says My tracking number. Then shows my console serial as the tracking number...

Your browser/email client detecting the serial as a tracking number has absolutely nothing to do with xbox.

They DIDN'T troll you. An Xb1 serial must be the same amnt of digits that a FedEx Tracking # is. Outlook reads the message, if it mentions shipping it searches for either a FexEx or UPS Tracking number (it most likely recognized the serial as it.). I am assuming that is what happened.
